The BonTon & Company mission is to bring together local producers and provide an experience where locals feel like they are travelling & visitors feel like they are local.

Despite our harsh climatic conditions, we aim to centre our dishes with food raised, grown or produced in the Yukon. With the assistance of our friends and neighbours we can spotlight local produce and ensure quality and freshness, even in the sub-arctic winter months.

Though we are influenced and inspired by food cultures of places we have travelled to and hope to visit, we aim to highlight Yukon produce on our plates. We want the best of Yukon while contributing to our community’s food culture and offering a memorable dining experience. When we say thank-you to our customers for supporting local, for eating local and for buying local we mean it literally. We buy directly from many Yukon farms and producers; what you see on our plates and in our cups are vegetables, eggs, meats, cheese, fruits, milk, flours/grains, coffee and bread from The Yukon.

Having an in-house butcher/charcutier allows us to fully use our locally-sourced animals; nothing is wasted. We pride ourselves on finding different ways to prepare our foods to deliver both flavour and something unique while utilizing the seasonal resources we have.

We can maintain a locally-sourced menu all year long thanks to the efforts of regional farmers who supply us. Through our producers, we can access the freshest ingredients while contributing to a more sustainable future for the Klondike.

Bonton & Company was founded with a strong commitment to improving access to locally grown food and playing a role in creating a more sustainable food network.

Bonton & Company is owned and operated by Shelby Jordan. Bonton & Company was founded on a deep desire to improve local access to locally grown food and have a role in a more sustainable food community.

Shelby has called Dawson home for 29 years. She started this endeavour in 2016, following a 15 year career in environmental and renewable resource management. Ten years ago, she set out on a different path spurred by the desire to learn a new skill coupled with wanting access to more local foods for her family.  Upon completing her training at Thompson Rivers University for butchery and later traditional charcuterie through the Italian Culinary Institute in Calabria, Italy she established BonTon Butchery & Charcuterie; a small backyard workshop processing Yukon Farmed and Yukon hunted meats. Shelby’s leap into something new resulted in a passion for the craft of traditionally made salami, sausages and charcuterie. 


Our Team

What began as a one-woman show has expanded to a team of women that are similarly committed to offering enjoyable dining experiences and elevating our food culture. We share ethos and culinary passions and supporting our community. We have been lucky to be able to draw on the strengths of our multi-talented crew back of house and front of house.

Ariel Adams

After completing a 2 year culinary management program at George Brown College in 2009, Ariel moved to Dawson City with hopes of finding community and a new source of inspiration. She found that, in 2020, when she joined the BonTon & Company team. Since the restaurant doors opened Ariel has created weekly changing dinner menus. Through this endeavour she found the community that she had been looking for among the food producers, the diners and the team she works with. Using locally sourced food, she now dedicates her time to creating diverse menus, that push her to stay inspired while continuing to further her culinary education.


Georgia Hammond

Georgia came to Bonton with 15 years experience feeding Yukoners. She entered the culinary world through the placer mining industry, learning to cook on the Yukon’s back roads and mountain tops. From there she transitioned into self employment, operating food trucks, concessions, camp cooking, catering, and creating wild foraged retail products; gradually focusing her culinary practice into one that is rooted in the land and community. She draws energy for her work from hunting, fishing, foraging, gardening, travel, and most importantly, gathering to eat. Through her lunch menus at Bonton, Georgia aims to provide more than just midday fuel, she hopes to give guests a reason to gather and a connection to the land that feeds them.


Ali Charette

Ali Charette

Ali came to Dawson via Ottawa in 2024 after a childhood spent primarily in the United States and Europe. Her post-university career was spent dabbling in various nonprofit organization (NGO) work but she always returned to her hospitality roots, an industry she has been a part of since she was 19. She is a graduate of Queen’s University and Algonquin College’s Hotel&Restaurant Operations Management program.

After working and managing several restaurants in Toronto and Ottawa over a ten-year period, Ali moved to Dawson in 2024 and has been with Bonton since 2025.  


Nicola Robinson

Nicola Robinson

Nicola originally hails from Farnham, England. Over the past 25 years Nicola has worked both front and back of house in the UK, Barbados, and Canada. She arrived in Dawson City in 2017 and has been part of the Bonton family since 2023.  When not creating delightful cocktails with locally-sourced ingredients she is working on opening her own sustainable business, Klondike River Distillery located in West Dawson.
